This bean known as Sky Roasters signature bean is cultivated from Andrés Fahsen, a fifth-generation coffee producer, who leads Finca Patzibir coffee farm in Guatemala's Atitlán region near Volcan Tolimán with a deep commitment to community and sustainable farming. The farm's name, derived from the Kaqchikel word meaning "Place of Tzibir (tree)," highlights its strong connection to nature, with Tzibir trees providing shade and symbolizing the region's unique microclimate. Under Fahsen's guidance, Patzibir employs meticulous farming techniques like optimal spacing and shading for coffee plants, terracing to accommodate mountainous terrain, and strategic grass planting to prevent soil degradation and enrich soil health. Managed in collaboration with Los Volcanes Coffee, Patzibir implements precise compost strategies and efficient transportation methods to ensure high-quality coffee cherries while prioritizing worker well-being, compensation, and environmental preservation.
